Track the emails that Joomla sends through the PHP Mailer

I'd like to see a log of when automated emails go out automatically via PHPmailer. Specifically, when visitors use the "forgot username" or "forgot password" functions. (I don't want to see the user password credentials, just WHO the user was; name/email and what action was taken.)

This would be useful for related items as well, such as tracking a log of contact form or download emails that go out through Joomla PHP mailer?

Is this possible?
